- You need of butter, softened (room temperature).
- Prepare of granulated sugar.
- Prepare of egg, beaten (room temperature).
- You need of granny smith apples, cored, peeled & diced (2 cups; 2 apples is probably enough).
- It’s of ⁄4 cup chopped walnuts.
- Prepare of vanilla extract.
- It’s of baking soda.
- It’s of baking powder.
- You need of salt.
- You need of ground cinnamon.
- It’s of ground nutmeg (this is a bit much for my taste).
- It’s of all purpose flour.
Irish Apple Cake instructions
- Preheat oven to 350 degrees F.
- Generously grease an 8-inch square cake pan.
- In a large bowl, cream the butter and sugar together until light and fluffy (use hand mixer).
- Add the egg, apples, nuts and vanilla and stir well.
- Sift in the dry ingredients and mix well.
- Pour the batter into the prepared pan & bake about 45 minutes, until the cake is lightly browned and a toothpick inserted into the center comes out clean..
- Remove from over and let the cake set in the pan for 5 mins, then remove from pan (I didn't remove it)..
- Serve warm or at room temperature with whipped cream or vanilla ice cream..
