- It’s 15 large of Eggs.

Dobos Torte is a very well-known cake in Romania, especially in Transylvania and I suppose in many other parts of the world. Nonetheless I have never eaten it in Romania; cake, chocolate and sweets. We had a lot of requests to translate the recipe into English, so we did. A rich Dobos Torte — which has alternating layers of yellow genoise cake and Caramel Buttercream — is topped with coarsely chopped caramelized sugar.
DOBOS TORTE step by step
- Separate eggs 5 at a time.
- beat egg whites until stiff and put in large bowl.
- Beat all the yokes with sugar until smooth.
- Fold yoke mixture into whites.
- slowly add flour through a strainer and blend until well mixed.
- Pour batter about 1/4 thick into well greased and floured 9 inch cake pans. Bake at 400°F. Cake is done when light brown.
- Lay cakes onto wax paper and let cool.
- CHOCOLATE FILLING PREP.
- Beat eggs and sugar until well blended.
- Cook over double boiler and cook until thick like custard.
- Melt 4 ounce squares of semi sweet chocolate and pour into cooked egg mixture.
- Add rum and ameretto and blend well. Let cool for 1 hour.
- Add butter to chocolate filling and mix with blender until smooth and creamy.
- Add equal amounts of filling to all cake layers and stack.
- TOPPING.
- Melt caramels in sauce pan over low heat.
- Pour into ungreased cake pan and refrigerate for one hour.
- Once cool pop out of pan and cut into one inch wedges and place on top of cake.
- Garnish to your liking.
