  1. You need 3 of eggs (beaten).
  2. It’s 3 of lemons.
  3. It’s 250 g of butter.
  4. Prepare 250 g of self raising flour.
  5. It’s 400 g of caster sugar.

  1. Heat oven to 160c.
  2. Line muffin tin, makes 12-14.
  3. Mix the butter, 250g of the sugar, eggs, flour, zest of 2 lemons and juice of 1 lemon until combined.
  4. Pour into cases and bake for about 30 minutes.
  5. Mix remaining 150g of sugar with zest of 1 lemon and juice of 2 lemons.
  6. Poke a few holes in the warm cakes whilst cooling and drizzle the mixture over each cake.
  7. Allow to cool and enjoy.
