- You need 200 g of Caster Sugar.
- You need 200 g of Self-Raising Flour.
- Prepare 4 of free range eggs.
- You need 200 g of butter.

- You need 100 g of Butter.
- Prepare 120 g of Icing Sugar.
- You need 1 tsp of Vanilla Extract.
Bramble Cottage Victoria Sponge instructions
- Preheat Oven to 180fan/400f/200c.
- Into a large bowl sieve your flour, sugar and baking powder.
- Add your eggs, butter and milk.
- Combine well (have a cheeky taste, even though it will b perfect).
- Split mixture into two 20cm cake tins.
- Whack into oven for 20 mins.
- Once done turn onto a cooling rack.
- Now make your butter cream.
- Combine your butter, icing sugar and vanilla extract.
- Once your cake has cooled, spread jam on top layer and your buttercream on bottom layer and place together.
- Finish with a sprinkle of icing sugar for decorative purposes.
