- Prepare 1.5 cups of All Purpose Flour.
- You need 1/4 cup of corn Flour.
- Prepare 120 g of unsalted Butter.
- You need 2 of eggs.
- It’s 2 tbsp of sour Cream.
- It’s 1/2 cup of milk.
- Prepare 1 cup of icing Sugar + additional for dusting.
- It’s 1/2 tsp of Salt.
- Prepare 2 tsp of Vanilla extract.
- You need 2 tsp of baking powder.
Irish Tea Cake step by step
- Sieve 1.5 cups flour thrice. Add corn flour and mix.
- Add 2 tsp baking powder, 1/2 tsp salt, sieve & mix with the flour.
- Blend 1 cup icing sugar, 120 gms butter until creamy.
- Add 2 eggs, 1 at a time, beat until pale & frothy.
- Add 2 tbsp sour cream, 1/2 cup milk, 2 tsp vanilla essence, blend well.
- Gradually add the flour mix & blend.
- Pour batter into a lined baking tin.
- Bake in a preheated oven at 180 degrees for 20-25 mins or until done.
- Allow to cool for 15-20 mins.
- Demould, top with icing sugar, serve with jam, berries & a steaming cup of tea.
