- Assemble all your ingredients and measure them out accurately..
- Sift flour and baking powder into a bowl. Add the margarine/butter and rub with your hands to a sandy texture..
- Make a well at the centre. Add egg, milk, sugar and essence and mix to get drop consistency..
- If the batter is too heavy you can add alittle more milk..
- Heat your sandwich toaster. Scoop batter using a spoon and drop into the grooves of the toaster, careful not to fill too much. Close the toaster and bake for 5minutes..
- Open the toaster and check using a fork whether your cakes are well baked. If not, cover and bake for a further 2minutes..
- If well done, remove from the toaster and leave to cool. Repeat the process until all your batter is gone..
- Once cooled, take the icing sugar, put in a sieve and sprinkle on your mini cakes..
- You can serve your mini cakes with tea or milk..
