- Prepare 1/4 cup of Milk.
- Prepare 1/2 cup of grated/ powdered jaggery.

- Prepare a loaf pan by greasing with oil and placing parchment paper..
- Preheat oven at 180C for 12-15 minutes..
- Warm 1/4 cup milk and add coffee powder, mix and keep aside..
- Mix wheat flour, arrowroot powder and salt. Sift 3-4 times and set aside..
- In a bowl mix curd and mix jaggery powder(I used organic jaggery and let it melt well in curd), add baking powder and soda and leave it for 2-3 minutes to bubble..
- Now after 2-3 minutes add melted butter and ghee, vanilla extract and mix..
- Add flour and coffee to this mixture by alternating in 2-3 portions..
- Pour the batter in the prepared loaf pan and bake for 30 minutes..
- After 30 minutes insert a skewer or toothpick and check if it comes out clean. Or bake for another 10 minutes..
- Cool on rack for 5 minutes and remove from pan. Serve warm or cool and store in airtight container for 2-3 days..
