  1. Warm the milk and add juice from one lime and vanilla to it and mix and keep it aside.
  2. Cream together butter, zest and sugar till light and fluffy.
  3. Add in eggs one by one mixing thoroughly each time.
  4. Add 1/3 of dry ingredients (flour+baking powder+salt)at a time through a sieve alternating with milk mix ending till all nicely combined.
  5. Add in the cherries and gently fold, don't overmix.
  6. Pour the batter in prepared tin and bake in preheated oven@180c for 30 mins or till the center comes out clean.
  7. Prepare simple syrup by boiling water and sugar together in a saucepan till the sugar is dissolved, take it off the heat and add 1 lime juice and allow it to cool.
  8. Once the cake is at room temperature prick it's surface with a scewer/fork and add simple syrup evenly and allow the cake to soak it up (don't add the whole syrup but generously till it's evenly wet).
  9. Frosting Chill the cream and whip it till it forms stiff peaks then add mangoes and fold till all combined.
